Cheap and Easy Meals

    Found this recipe on Cheap Cooking. It's perfect if you know you'll be gone all day and need dinner ready for when you get home. I really like eating it like pork BBQ on a bun...but yummy all by itself! :-)  To change it up, instead of using chicken you can also throw in some lil' smokies instead....that's hubby's favorite!


Slow Cooker BBQ Chicken

This would have to go into that "so easy it's not really a recipe" category.
1 cut up chicken or just your favorite pieces
2 cups barbecue sauce or a jar of your favorite store-bought
Put the chicken in the slow cooker (Crockpot™ is actually a brand name) and cover with the barbecue sauce. Cook on low for 6-8 hours. (Newer slow cookers will probably only take 4 hours as they cook much hotter than old ones.)


This next recipe I stole from Alisha. :-)  I haven't tried it yet, but it sound super yummy and I can't wait to give it a try.


ALOHA PORK CHOP SKILLET
Aloha Pork Chop Skillet

2 tsp. oil
4   bone-in pork chops (1-1/2 lb.)
each red and yellow pepper, coarsely chopped
2 cans  (8 oz. each) pineapple chunks in juice, undrained
1/2 cup fat-free reduced-sodium chicken broth
1/4 cup  KRAFT CATALINA Dressing
1-1/2 tsp. garlic powder
1-1/2 cups  instant white rice, uncooked

make it!

HEAT oil in large nonstick skillet on medium-high heat. Add chops; cook 5 min. on each side or until browned on both sides.
ADD all remaining ingredients except rice; mix well. Bring to boil.
STIR in rice; cover. Cook on medium-low heat 5 min. or until chops are done (160°F). Remove from heat; let stand 5 min.

SUBSTITUTE
Substitute 4 small boneless skinless chicken breast halves (1 lb.) for the pork chops. Prepare as directed, increasing browning time to 5 to 6 min. on each side.
